Dr. Phil

You can be the benificiaries of my summarization skills, but I still recommend reading the whole book.

All of the following information is from Dr. Phil’s “Ultimate Weight Loss Solution”

Key #1 Right Thinking

  • All thoughts have a corresponding physical reaction – positive increase our energy, negative suppress our energy
  • Replace negative with positive thoughts – “This won’t work. I can’t really achieve my goals.” Replace with “My goal is within my control. I will achieve the goals I will set for myself. I will do what is necessary to succeed. I won’t quit.”
  • Define what you hope to achieve in a measurable way
  • Define how you will do that
  • Create a timeline for achieving your goal
  • Internal dialogue audit - What are you saying to yourself about your weight, body, ability to achieve goals?
  • Challenge faulty thinking – if you think you can’t go a day without your favorite foods is it really true?

Catherine's Granola

Granola

9 Cups Whole oats (better than quick)
(1 cup wheat germ)
¾ cup coconut
1/3 cup sesame seeds
1 ½ cup nuts (peanuts)
(3T Lecithin)
1 ½ T Cinnamon
1 t nutmeg
1 cup oil (canola)
1 c honey (3/4 cup sugar and ¼ cup molasses)
2 t vanilla
½ cup water
1 cup raisins


Mix all together in one of those big aluminum disposable roasting pans (I just rinse and reuse mine).
Bake in oven at 325 for 30-45 minutes until color changes to darker brown as things toast.

Ingredients in parentheses above are optional – but very healthy

Morning Jumpstart

Hey, ladies. I just wanted to let you know that if you have the cable channel "Lifetime" (channel 26 if you have Time Warner) they have a couple fitness shows on in the morning. At 6 am they have Denise Austin (she is kind if cheesy but she does aerobics and some toning for a half hour) and then at 6:30 am they have something called "Your Workout" which does Pilates and yoga and some other things for a half hour. Anyway, I did both shows the other morning and it was a nice jump start to my day. Just thought I would share.

progress

I'm so happy that I had to post this up I've lost 4 lbs. since we've begun our fitness program. I feel great! and this time I will accomplish my weight goals, thanks to the help of my friends.

Want Pasta but not the Carbs?

Rick and I love pasta but are trying to incorporate more veggies. This has become an all-time favorite of ours. The recipe here is the original from Williams-Sonoma, but we lighten it up by skipping the asiago cheese and we prefer a plain basil pesto. A quicker version - buy pre-made pesto sauce , then you just cook the zucchini, add the sauce and you're done! It's great with a tomato sauce too.
Zucchini "Pasta" with Mint Pesto
Ingredients:

1 cup firmly packed fresh mint leaves
1/3 cup vegetable stock or canned broth
3 Tbs. grated asiago cheese, plus extra for
garnish (optional)
2 large garlic cloves, cut up
2 tsp. olive oil
3 yellow summer squashes, about 3/4 lb. total
3 zucchini, about 3/4 lb. total
1/4 cup chopped shallot
1 1/2 tsp. dried thyme
Salt and freshly ground pepper, to taste

Directions

In a blender or food processor, combine the mint, stock, 2 Tbs. of the cheese, the garlic and olive oil. Process until smooth. Set the pesto aside.

Using a mandoline or a vegetable peeler, cut the yellow squashes and zucchini into long, narrow ribbons.

Heat a large nonstick fry pan over medium heat. Coat the pan with nonstick cooking spray. Add the shallot and sauté until softened, about 3 minutes. Add the yellow squashes, zucchini and thyme and season generously with salt and pepper. Sauté until the squashes are just tender, about 8 minutes more.

Stir in the mint pesto and heat for 1 minute. Remove from the heat and stir in the remaining 1 Tbs. cheese.

Transfer to a warmed serving dish and toss with extra cheese. Serve hot. Serves 4 to 6.

Directions

Crystal Falls Volleyball court. Go north on Bagdad. Left on Crystal falls, Left on Wigwam and take your first left into the parking lot. The volleyball court is to the right when you are facing the pool from the parking lot.

ALSO! Does anyone know how to get a hold of the reservations on the Vista Ridge tennis courts? I went this morning to play and there was a camp that's going to be there in the AM the rest of the week! I had to go for a run instead... lame.

Volleyball courts

Can someone please let me know the location of Wednesday's meeting. I'd like to get it right for the RS Bulletin this week.

Also, do you want me to add this website to the RS Bulletin so maybe more people would get involved or is that too public? Just let me know what you think.

Pilates anyone?

My neighbor is a pilates instructor and she is willing to come teach a session to us one wednesday night. How does the 20th sound to everyone? I want to make sure most of us can be there to take advantage of this great opportunity.

tennis lessons

I was going to suggest the YMCA has beginners tennis lessons but I just called and that class is already full. Howevfer there is a Tennis 2 class beginning June 5th- July 10th held on Tues. evenings 7:30-8:30 pm at Vista Ridge H.S. it is $35 for members and $50 for non-members. I would be happy to give anyone pointers on how to play a better game if you want to play with me, the rest is just getting out there and doing it, as with anything "practice makes perfect".
